It's easy to explain the up-do becoming a down-do...after all, in an age without hair spray or bobby pins, pinned up hair probably wouldn't survive a dance-filled ball, let alone alone a day of massacres, canoe chases & manhandling by wild indians! The braid is a different matter, though...I have always assumed Alice just did it herself as she wandered (mentally and physically) along. It's rather loose & just hanging there...or perhaps, more romantically, Uncas braided it for her in the cave! There's an explanation I like, even if it isn't what happened! ;o)
