Looking for the process for salting and drying meat?

As a history teacher I would like my students to taste typical British Army field rations, which consisted, according to diaries &c. that I have read, of dried salt pork, fish, or beef. Can anyone tell me the process to dry and properly salt meat? I would like to give it a try. I have access to a smoker but I think this is different than that.
