Question for Reinactors

So, I'm finally making BTs longhunter shirt. I've made a prototype on the sewing machine, but of course, this one has to be made by hand. Two questions: 1) are French seams acceptable? and, 2) is there a particular stitch that should be used other than the running (quilting) stitch? In all the reading we've done, we haven't come accross anything that would help on these two subjects. Any help or suggestions would be greatly appreciated. Thanks, NS
