Hi Bill,
Marcia gave you the straight scoop on turkey gizzards. I'm with you- I like them.
The kidney/intestine concoction was served at a whaling festival in Barrow. They do not waste any of the whale. Most of the other food served was excellent, even the fermented whale meat (although you have to watch out for botulism).
I had camel and kangaroo in Australia a few years ago. I thought it was pretty good. Maybe your Saudis didn't know how to cook it for "Western" tastes. But then the Aussies eat vegemite, which is probably the worst stuff I have ever tried to eat.
