I think there is enough there for a miniseries -- the life and times of Hawkeye. They took 4 hours to do LOTM alone (and left half of it behind, darn it!), and there must be that much in the other four books.

Of course, the big question is -- who would play Hawkeye, Uncas, and Chingachgook, Cora, Alice, and Duncan, now that we all have them so set in our minds? Our expectations will be pretty high indeed!
